Recipe Ingredients

  • 1 package (9.6 ounces) JOHNSONVILLE Bold & Spicy Smoked Breakfast Sausage, cut into ½-inch pieces
  • 1 tablespoon vegetable oil
  • ¼ cup chopped onion
  • 1 cup chopped sweet red, orange or yellow bell peppers
  • 1 cup chopped fresh spinach
  • 1-3/4 cups flour
  • ¼ cup sugar
  • ½ teaspoon salt
  • 6 eggs
  • 1-1/2 cups milk
  • 3 tablespoons butter
  • 3/4 cup shredded Cheddar cheese
  • ¾ cup shredded pepper-Jack cheese

Cooking Instructions

  1. Preheat oven to 375°F.
  2. In an ovenproof 12-inch skillet, sauté the sausage, onions, peppers and spinach in oil over medium heat until sausage is browned, and onions and peppers are crisp-tender; transfer to a bowl and keep warm.
  3. In a bowl, combine the flour, sugar and salt. In another bowl, combine eggs and milk; beat well. Whisk egg mixture into flour mixture until smooth.
  4. In the same skillet, melt butter and swirl to coat pan, add egg mixture. Bake for 30-35 minutes or until browned and puffed.
  5. Layer with half the cheese, sausage mixture and remaining cheese. Return to oven for 5 minutes or until cheese is melted.
