Sausage Breakfast Skillet with Tomatoes & Basil

  • 1/2 (12 ounces) package JOHNSONVILLE Original Recipe Breakfast Sausage Links
  • 2 red skinned potatoes, cut into thin wedges
  • 1 small onion, sliced
  • 1 teaspoon rosemary, dried or fresh
  • 2 tablespoons olive oil
  • 1 cup grape tomatoes
  • 2 - 4 large eggs
  • 1/3 cup shredded Gouda cheese
  • 1/4 cup thinly sliced fresh basil leaves, to garnish

Cooking Instructions

  1. In a bowl, combine the potatoes, onions, rosemary and oil.
  2. In a large skillet, cook and stir potato mixture over medium heat, turning potatoes occasionally to brown both sides; about 5 minutes.
  3. Add sausages to pan and cook alongside potatoes; 10-15 minutes. Turn occasionally to brown.
  4. Add tomatoes to potato mixture; stir to combine. Heat through; about 3 minutes.
  5. Use a rubber scraper to push ingredients to the outside pan edges; leaving a space in the center to cook eggs.
  6. Crack eggs in skillet and cook to desired doneness.
  7. Remove from heat.
  8. Sprinkle with cheese and basil.
