  1. Heat sausage patties according to package skillet directions. Remove from skillet and set aside. Heat sausage pieces according to package skillet directions. Remove from skillet and set aside.
  2. In the same skillet, melt butter over medium heat; whisk in flour to make a smooth paste.
  3. Gradually add the milk, salt and pepper; cook and stir until thickened. Add sausage pieces; stir to combine to create gravy.
  4. To assemble sandwiches, split biscuits in half horizontally. Layer each biscuit bottom with the egg, sausage patty, gravy, chives and biscuit tops.
