Sweet Potato Sausage Egg Hash

Ingredients

1 package (13.5 ounces) JOHNSONVILLE Smoked Rope Sausage or 1 package (14 ounces) JOHNSONVILLE New Orleans Andouille Smoked Sausage, cut into coin-slice pieces or 1 package (10 ounces) JOHNSONVILLE Original Smoked Sausage Slices

2 medium sweet potatoes, chopped

1 small onion, chopped

3 cloves garlic, minced

2 tablespoons butter

Salt and pepper, to taste

Cooking Instructions

Preheat oven to 425°F.
In a large oven proof skillet, cook and stir onions and garlic in butter over medium-high heat until onions are translucent; about 5 minutes.
Add sausage and sweet potatoes to skillet; stirring occasionally for 8-10 minutes until potatoes are tender. Cover skillet with a lid while cooking.
Make six indentations in mixture for eggs; crack six eggs over sweet potato hash.
Place skillet in hot oven and bake 10-15 minutes or until eggs are set.
