Looking for a weeknight dinner that brings bold flavor with minimal cleanup?

This One Pot Cajun Pasta is the answer. Packed with smoky Andouille sausage, tender linguine, and a creamy Cajun-seasoned sauce, it delivers just the right amount of spice and comfort in every bite. Fresh veggies and juicy grape tomatoes brighten the dish, while a touch of thyme takes it over the top. The best part? Everything comes together in one skillet, making it perfect for busy nights when you want something hearty without the hassle.

Ingredients

Directions

  1. Cook pasta according to package directions (reserve one cup of the cooking liquid), drain, set aside and keep warm.
  2. In a large skillet, melt butter over medium heat. Add sausage, onions and peppers. Cook and stir until sausage is brown and vegetables are tender; about 5 minutes.
  3. Add garlic and cook and stir until fragrant; about 2 minutes.
  4. Reduce heat to low. Stir in cream and seasoning.
  5. Add pasta and tomatoes; toss to coat evenly. Heat for 2 minutes or until tomatoes begin to soften. If sauce is too thick, gradually stir in some reserved pasta water until desired consistency is reached.
