Made with Johnsonville Ground Italian Sausage, gooey mozzarella centers, and a splash of marinara, these mini loaves deliver all the cozy flavors of classic Italian meatloaf without the long bake time.   1. Preheat oven to 350°F.
  2. In a bowl, combine the eggs, breadcrumbs, Parmesan cheese and ½ cup of marinara sauce; mix well. Add the sausage; mix until combined. Divide mixture into 12 equal portions, roll into balls and set into greased muffin cups. Press 3 mozzarella pearls into the center of each meat ball and press meat over the top of the cheese to completely cover.
  3. Bake for 15 minutes.
  4. Top each with about one tablespoon of marinara sauce and a little Parmesan cheese.
  5. Bake for 5 more minutes, until the internal temperature reaches at least 165°F.
  6. Serve with remaining sauce and garnish with fresh chopped parsley, if desired.
