Creamy Chorizo Queso Pasta

Queso for dinner? Say less. Spicy Chorizo Sausage, tender shells and a creamy, cheesy queso sauce come together with tomatoes, green chiles and fire-roasted corn for a bold, easy dinner. Top it with fresh cilantro and dig in.

Ingredients

1 package (16 ounces)

12 ounces small shell pasta

1 jar (15 ounces) salsa con queso dip

1 can (10 ounces) diced tomatoes with green chiles, undrained

1 cup frozen fire-roasted corn and pepper blend

¼ cup chopped fresh cilantro

Directions

Cook pasta according to package directions; drain and set aside.
Meanwhile, in a large skillet, cook and crumble sausage over medium heat until browned and the internal temperature reaches 160°F. Drain excess grease if desired.
Stir in salsa con queso, diced tomatoes with green chiles, and corn blend. Bring to a simmer and cook for 3 to 5 minutes, stirring occasionally.
Add the cooked pasta to the skillet and toss until evenly coated with the sauce.
Sprinkle with chopped cilantro and serve.
