Ingredients

1 package (13.5 ounces) Johnsonville Andouille Smoked Rope Sausage, sliced and cut into half moons
24 ounces cherry tomatoes
1 medium onion, diced or 1 cup frozen diced onions
4 garlic cloves, minced
½ cup olive oil
1 block (8 ounces) feta cheese
2 cups fresh baby spinach
½ box (8 ounces) penne pasta, cooked according to package directions

Directions

Preheat oven to 400°F.
Place sausage, tomatoes, onions, garlic, olive oil and Italian seasoning into a greased 13x9 baking dish and stir to combine. Nestle block of feta cheese into sausage mixture. Bake for 30 minutes or until bubbly.
Stir ingredients in baking dish to combine and crush tomatoes.
Add spinach and pasta to baking dish and stir to combine.
Sprinkle with basil and Parmesan cheese, if desired.
