  1. Melt 6 tablespoons of butter in a large skillet. Cook the sliced onions over low heat for 15–20 minutes until golden and sweet. Move to a plate.
  2. Cook the 6 sausage patties in the skillet according to package instructions. Set aside.
  3. Pour the beaten eggs into the skillet (you may need to do this in batches), shaping them into circles roughly the size of your bread.
  4. Build each sandwich: Bread, cheese slice, onions, egg, sausage, cheese slice, bread.
  5. Wipe the skillet clean. Melt the remaining butter and grill the sandwiches on low heat for about 5 minutes, flipping halfway, until the rye is golden-brown and the cheddar is perfectly gooey.
