This Papas con Chorizo recipe with Johnsonville Chorizo Ground Sausage is your new go-to! The chorizo, cooked until crispy, infuses the dish with its signature smoky, spicy kick, perfectly complementing tender potatoes and savory onions. Served on crispy corn tostadas, this is ideal for brunch or a satisfying dinner.

  1. Add the oil to a large skillet over medium heat and heat until shimmering, about 1-2 minutes.
  2. Add the potatoes and sauté for 6 minutes, or until some of the potatoes begin to brown. Add the onion and sauté for 3-5 minutes, or until more of the potatoes begin to brown and soften.
  3. Create a well in the center of the pan and add the Johnsonville Chorizo Ground Sausage, breaking up with a wooden spoon into crumbles. Once the chorizo begins to brown, mix everything together and cook for an additional 6-8 minutes or until the vegetables are tender and chorizo is crispy. Season with salt to taste. Optionally, drain the papas con chorizo on a paper towel-lined plate before assembling.
  4. Plate the tostadas individually or on one large platter. Spread some Mexican crema on the tostadas, add some of the papas con chorizo, and sprinkle with crumbled queso fresco, shredded iceberg lettuce, chopped cilantro, and sliced avocado. Top with salsa or pico de gallo. Serve while warm.
