In a skillet cook and stir sausage, bok choy, carrots and garlic (if desired) until vegetables are crisp-tender. Set aside and keep warm.
In a bowl, combine 2 beaten eggs and shredded cheese.
In a saucepan bring water to a boil. Add ramen and cook for 3 minutes – do not drain.
Add egg and cheese mixture to the ramen in the saucepan, stirring constantly.
Cook and stir over medium heat until cheese is melted and egg is cooked through.
Add sausage and vegetables to the ramen mixture and toss to combine.
Sprinkle with green onion and sesame seeds (if desired) and serve with soft-cooked eggs.
